A Rattlesnake rework would be a dream as they were going to materialise it in 1987 as a b-side to Don't you want me anymore? but they couldn't, so that's not happening... (despite is totally a banger)
I agree with you on A Sunset. I love it now but was not convinced by the early Jarvis/Hawley versions.
With the two songs you mention, they were examples of the Different Class II pop songs they tried but ditched. Rightly in my opinion - they're not strong enough. Always thankful to get unreleased songs but I think they're fine left as demos.
Plus, I wouldn't want Pulp to have to rely on tarting-up songs that they have already released in some form.
After You/GTHL/Grown-Ups are different as they had never been publicly released before their revamp.
Pulp have 9 creative brains now. Plenty of ability to create from scratch.
My opinion on "A Sunset" is that it has always done very little for me but we can't agree on everything, can we?
I don't agree with reworking older material that has already been released unless it's just one song that could be turned into an absolute classic. I don't think that many of the demos fit this description: "You're Not Blind" is great but too close to "Babies" or "Lipgloss" to warrant a rework. "Modern Marriage" is an interesting one but again, there are other songs that follow the spoken verse / big chorus structure.
Also, there are many songs from 1999-2001 that could be reworked: we've heard the likes of "Cuckoo" and "The Quiet Revolution". Mark spoke very highly of "The Last Song in the World" and "Emmanuel" must have had some weight in it to be attempted for "Hits".
I don't think that they would ever go back as far as the 1980s which is a shame because "Maureen" and the aforementioned "Rattlesnake" could sound amazing on a big budget.
Well Jarvis has used two already released songs for his first solo album and one was ahis lead single ! And he was right, because his versions are way better than the one released by that other singer. Far far better.
For me, demos are not completed songs, so there could be an opening. It's a bit of a waste to let all those songs left as demos. Or they could rework all those songs and release them as some kind of side album i dont know. but quality songs should never be left unfinished. Grown Ups and Got to Have Love, and after You as well... Jarvis seems to think the same.

I'm still curious about the writing process for More; it's unclear from the credits what is meant by 'Pulp' nowadays, in terms of writing. The interviews I've read / heard haven't been enlightening.
